POPPY CAKE WITH COCONUT

INGREDIENTS FOR COCOA BAKE:

5 eggs, room temperature
3/4 cup sugar
2/3 cup cake flour
1 tablespoon of potato flour
2 tbsp cocoa
pinch of salt
INGREDIENTS FOR POPPY CAKE:

5 proteins, room temperature
1/2 cup sugar
3/4 cup poppy seeds, grains
100 g coconut
1 teaspoon of baking powder
pinch of salt
INGREDIENTS FOR CONSTRUCTION CREAM:

500 ml milk
4 tablespoons of sugar
1 teaspoon of vanilla extract or essence
2 yolks
1 vanilla pudding (40g)
1 tablespoon wheat flour
1 teaspoon potato flour
200 g butter, room temperature
COATING INGREDIENTS:

80 ml 30% cream cream
80 g dark chocolate
INGREDIENTS FOR PONCHES:

1/2 cup warm water
1 tsp coffee
1 teaspoon of sugar
ADDITIONALLY:

2 peach jellies
500 ml hot water
1 packet of round biscuits
raisins for decoration
* 1 cup of 250 ml

Sift flour with cocoa. Proteins are separated from yolks and mixed together with a pinch of salt to a stiff mass. Add sugar and one egg yolk while mixing. Using a large spoon, add dry ingredients in several portions and mix gently so that the protein foam falls as little as possible. Form with dimensions 24 x 24 cm or slightly larger is lined with baking paper. We put the dough and bake at 170 C for about 35-40 min. to the so-called dry stick. After baking, leave to cool, then cut in half.
Proteins are whipped with a pinch of salt to a stiff mass. At the end we add sugar and mix for a while. Using a large wooden spoon or spatula, combine the mass with poppy seeds, chips and sifted baking powder. Put the form back in paper and put the dough back. Bake at 180 C for about 30-40 min, until the top is slightly browned. We take it out and leave it to cool.
We dissolve jellies in hot water. We leave to cool and light concentration.
Warm 300 ml milk with sugar and vanilla. Mix the yolks and sifted flour in the remaining milk. Pouring cold milk all the time while stirring. Mix and cook on low heat until we get a thick pudding. Wrapped ready with plastic wrap so that the sheepskin does not form and leave to cool completely.
We mix the soft butter for a moment, then add pudding after a spoon until use.
One top is soaked with half a punch (mixed ingredients), we put half the cream. We arrange the poppy seed cake, then the second part of the cream. Soak the remaining punch. Heat the cream well, then add pieces of chocolate. We put on a sponge cake and level it. We put biscuits side by side. We are still pouring jelly. We put the dough in the fridge for the whole night.
