CAKE WITH RASPBERRIES AND CREAM
INGREDIENTS FOR COCOA BAKE:
4 eggs
3/4 cup sugar
3/4 cup cake flour
2 tbsp cocoa
3/4 teaspoon baking powder
pinch of salt
INGREDIENTS FOR CHOCOLATE CREAM:
600 ml 30% cream
200 g dark chocolate
3-4 tablespoons powdered sugar
2 teaspoons of gelatin *
1/4 cup water
ADDITIONALLY:
2 raspberry jelly
700 ml hot water
approx. 400 g raspberries
chocolate sprinkles or grated chocolate
* gelatin can be replaced e.g. with cream-fix
1 cup with a capacity of 250 ml
Form with dimensions 24 × 24 cm or slightly larger, we lay out with baking paper.
The ingredients for the sponge cake should be at room temperature. Sift flour with powder and cocoa. Proteins are separated from yolks and mixed with a pinch of salt into stiff foam. At the end of mixing, add sugar gradually until the mixture is thick and shiny. Then reduce the mixer speed to a minimum and add one yolk. Using a large wooden spoon or spatula, add dry ingredients in a few small portions and mix gently. We put it into the mold and bake at 170 C for about 30-35 minutes to the so-called dry stick. After baking, leave it to cool (we can lightly soak the sponge cake with an infusion of tea, sugar and possibly a little alcohol).
We dissolve jellies in hot water, leave to cool. We put in the fridge until it starts to solidify.
150 ml fondant we warm up strongly and add chocolate pieces, mix until completely cool. We leave it to cool, but it must still be liquid.
Pour gelatin with cold water and leave to swell. Then heat for a while and mix until dissolved (do not bring to a boil). We leave it to cool. Mix the cream into a stiff mass, then add the sifted powdered sugar. Using a spoon or whisk, add melted chocolate in two portions and mix gently. Then pour in a small stream of gelatin. 1/3 cream put on sponge cake, put raspberries and pour jelly. We put in the fridge for a while until it is almost cut. Then we evenly put the remaining cream and put in the fridge for a few hours or all night. Before serving, decorate the top with chocolate sprinkles or grated chocolate.
