Double Stacked Loaded Strawberry Shortcake Cheesecake Donut
Ingredients:
For the Donuts:
- 2 ¼ teaspoons active dry yeast
- ¾ cup warm milk
- ¼ cup granulated sugar
- 1 egg
- ¼ cup unsalted butter, melted
- 2 ½ cups all-purpose flour
- ½ teaspoon salt
- Oil for frying
For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream or whipped topping
For the Strawberry Layer:
- 2 cups fresh strawberries, chopped
- 1 tablespoon sugar
- 1 teaspoon lemon juice
For the Crumb Topping:
- ¾ cup graham cracker crumbs
- 2 tablespoons melted butter
- 1 tablespoon brown sugar
For Assembly:
- Caramel or strawberry sauce, for drizzling
- Whole strawberries, for garnish
Directions:
1. To make the donuts, combine warm milk, sugar, and
yeast in a bowl. Let sit for 5 minutes until foamy. Mix in
egg, melted butter, flour, and salt until dough forms.
Knead until smooth and elastic, about 8 minutes. Cover
and let rise for 1 hour or until doubled.
2. Roll out the dough to ½-inch thickness and cut into
large rounds. Let rise again for 30 minutes.
3. Heat oil in a deep fryer or pan to 350°F (175°C). Fry
donuts until golden brown, about 1–2 minutes per side.
Drain on paper towels and let cool completely.
4. In a bowl, beat cream cheese, powdered sugar, and
vanilla until smooth. Fold in whipped cream to create a
fluffy cheesecake filling.
5. In another bowl, toss chopped strawberries with sugar
and lemon juice. Let them macerate for 15–20 minutes.
6. Combine graham crumbs, melted butter, and brown
sugar to form a crumb topping.
7. Slice donuts in half horizontally. Layer bottom halves
with cream cheese filling, strawberry mixture, and a
drizzle of caramel.
8. Top with the second donut halves, more cheesecake
filling, strawberries, crumbs, and additional caramel
drizzle.
9. Garnish with a whole strawberry on top and serve
immediately for best texture.
