No-Bake Chocolate Cheesecake

 



Ingredients:


For the crust:

- 1 ½ cups chocolate cookie crumbs (like Oreos, without

cream)

- 5 tablespoons unsalted butter, melted


For the filling:

- 500g cream cheese, room temperature

- 1 cup semi-sweet chocolate chips, melted and cooled

- 1/2 cup powdered sugar

- 1 teaspoon vanilla extract

- 1 cup heavy whipping cream


For the ganache topping:

- 1/2 cup heavy cream

- 100g dark chocolate, chopped


For garnish:

- Chocolate curls or shavings

- Fresh mint leaves


Directions:


1. In a bowl, mix the chocolate cookie crumbs and melted

butter until well combined. Press into the bottom of a

springform pan to form a firm crust. Chill for 30 minutes.

2. In a large bowl, beat the cream cheese until smooth

and creamy. Add the powdered sugar and vanilla extract,

mixing until well blended.

3. Fold in the melted chocolate until evenly incorporated.

4. In a separate bowl, whip the heavy cream until stiff

peaks form. Gently fold the whipped cream into the

chocolate mixture until light and fluffy.

5. Pour the filling over the prepared crust and smooth the

top. Refrigerate for at least 6 hours, or overnight for best

results.

6. To make the ganache, heat the heavy cream until just

simmering. Pour over the chopped chocolate, let sit for 2

minutes, then stir until silky smooth. Cool slightly.

7. Pour the ganache over the chilled cheesecake and

spread evenly. Garnish with chocolate curls and a fresh

mint leaf before serving.
