Luscious Southern Blueberry Cheesecake 🍰🫐💜
Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 2 cups fresh blueberries
- 1/3 cup granulated sugar for blueberry swirl
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons water
Directions:
1. Preheat oven to 325°F (165°C) and grease a 9-inch
springform pan.
2. In a bowl, mix graham cracker crumbs with melted
butter until evenly combined.
3. Press the mixture firmly into the bottom of the pan to
form the crust.
4. Bake the crust for 10 minutes, then remove and let
cool.
5. In a saucepan, combine blueberries, sugar, lemon juice,
cornstarch, and water.
6. Cook over medium heat for 6–8 minutes until the
blueberries burst and the sauce thickens.
7. Remove from heat and allow the blueberry mixture to
cool slightly.
8. In a large bowl, beat cream cheese until smooth and
creamy.
9. Add sugar and mix until fully incorporated.
10. Beat in eggs one at a time, mixing gently after each
addition.
11. Add vanilla extract, sour cream, and heavy cream,
mixing until smooth.
12. Pour the cheesecake batter over the cooled crust.
13. Spoon the blueberry sauce over the batter and swirl
gently with a knife for a marbled effect.
14. Bake for 55–65 minutes, until the center is just set
with a slight jiggle.
15. Turn off the oven, crack the door open, and let the
cheesecake cool inside for 1 hour.
16. Refrigerate for at least 4 hours or overnight before
slicing and serving.
