Purple Velvet Cake Roll Delight

 



Ingredients:


For the purple velvet sponge:

- 4 large eggs, room temperature

- 3/4 cup granulated sugar

- 1 teaspoon vanilla extract

- 1 tablespoon vegetable oil

- 1/4 cup buttermilk

- 1 cup cake flour

- 1 teaspoon baking powder

- 1/4 teaspoon salt

- 1 tablespoon ube (purple yam) extract or purple food

coloring

- Powdered sugar (for rolling)


For the cream filling:

- 1 cup heavy whipping cream, chilled

- 1/4 cup powdered sugar

- 1/2 teaspoon vanilla extract

- 4 oz cream cheese, softened


For decoration:

- Whipped cream swirls

- Blueberries

- Sprinkles

- Edible flowers (optional)

- Powdered sugar, for dusting


Directions:


1. Preheat oven to 350°F (175°C). Line a 10x15-inch jelly

roll pan with parchment paper and lightly grease it.


2. In a large bowl, beat the eggs and sugar together with

an electric mixer for 5–7 minutes until pale, thick, and

tripled in volume.


3. Add vanilla extract, oil, buttermilk, and ube extract or

coloring. Gently fold until combined.


4. Sift in the flour, baking powder, and salt. Fold the dry

ingredients gently into the wet mixture to keep the batter

airy.


5. Pour the batter into the prepared pan and spread

evenly. Bake for 10-12 minutes, or until the cake springs

back when touched.


6. Remove from oven and immediately turn the cake onto

a clean kitchen towel dusted with powdered sugar. Peel

off parchment and gently roll the cake with the towel

from the short end. Let it cool completely.


7. For the filling, beat cream cheese until smooth. In

another bowl, whip heavy cream, powdered sugar, and

vanilla until stiff peaks form. Fold the whipped cream

into the cream cheese until light and fluffy.


8. Carefully unroll the cooled cake. Spread the filling

evenly over the surface, then gently roll it back up

(without the towel). Wrap in plastic wrap and refrigerate

for at least 1 hour.


9. Before serving, top with whipped cream swirls,

blueberries, sprinkles, and edible flowers. Dust with

powdered sugar for a magical touch.
