🔥 Preheat the oven to 400°F and line a baking tray with
parchment paper.

🍠 Toss the sliced beets with olive oil, balsamic vinegar,
honey, salt, and pepper until evenly glossy.

🔥 Roast the beet slices for 20 minutes until tender but
still flexible enough to wrap around the cheese.

🌰 Toast walnuts with butter, honey, and salt in a dry
pan over medium heat for 3 minutes until glossy.

❄️ Set the toasted walnuts aside on parchment paper to
cool and crisp up.

🥣 Beat goat cheese with cream cheese, chives, dill,
thyme, garlic, lemon zest, salt, and pepper until silky.

🎨 Spread the herbed cheese into a log shape on a sheet
of plastic wrap, then roll tightly to seal.

❄️ Chill the cheese log in the fridge for 1 hour until firm
enough to handle without breaking.
