Ingredients:
- 1 lb ground beef
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 1 can (14.5 oz / 411g) diced tomatoes, with juice
- 1/4 cup beef broth
- 2 tablespoons soy sauce
- 1 teaspoon red pepper flakes (optional)
- 1 teaspoon Italian seasoning
- 8 oz (225g) wide egg noodles
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
1. Cook the egg noodles according to package directions
until al dente. Drain and set aside.
2. In a large skillet, heat 1 tablespoon of olive oil over
medium-high heat. Add the ground beef and cook until
browned. Drain excess fat and set the meat aside.
3. In the same skillet, add the remaining tablespoon of
olive oil. Sauté the bell peppers, onion, and garlic for
about 5-6 minutes, until softened.
4. Stir in the diced tomatoes with juice, beef broth, soy
sauce, Italian seasoning, and red pepper flakes.
5. Return the cooked beef to the pan and let simmer for
5-7 minutes to combine flavors.
6. Add the cooked noodles and toss well to coat evenly.
