My Most Requested Pasta Salad


Ingredients:  
- 12 oz (340 g) rotini pasta  
- 1 cup cherry tomatoes, halved  
- 1 cup cucumber, diced  
- 1/2 red onion, finely chopped  
- 1/2 cup black olives, sliced  
- 1 cup cheddar cheese cubes  
- 1/2 cup mayonnaise  
- 1/4 cup sour cream  
- 2 tablespoons Dijon mustard  
- 1 tablespoon white vinegar  
- Salt and pepper to taste  
- 1 teaspoon garlic powder  
- Fresh parsley for garnish  

Instructions:  
1. Cook the rotini pasta according to package
instructions. Once cooked, drain and rinse under cold
water to cool.  
2. In a large mixing bowl, combine the cooked pasta,
cherry tomatoes, diced cucumber, finely chopped red
onion, sliced black olives, and cheddar cheese cubes.  
3. In a separate small bowl, whisk together the
mayonnaise, sour cream, Dijon mustard, white vinegar,
garlic powder, salt, and pepper until smooth and well
combined.  
4. Pour the dressing over the pasta mixture and gently
toss to coat all the ingredients evenly.  
5. Cover the bowl and chill in the refrigerator for at least 1
hour before serving to allow the flavors to meld.  
6. Before serving, garnish with fresh parsley for a pop of
color and added freshness.
