INGREDIENTS

BOTTOM
  • 200 g of root cookies (e.g. Ikea, Tago, HOMEMADE )
  • 50 g of butter
CURD
  • 1 kg of ground cheesecake cottage cheese
  • 200 g of sugar
  • 30 g of potato flour
  • 1 tablespoon of vanilla sugar
  • 200 g cream 30%
  • 3 eggs
TOP
  • 3 oranges
  • 1 apple
  • a pinch of cinnamon
  • 4 tablespoons of sugar
  • 1 tablespoon of orange jelly or 1/2 tablespoon of food gelatin or 1 heaped teaspoon of agar
  • spicy cookies for decoration + 2 chocolate cubes (e.g. white) for attachment

PREPARATION

BOTTOM
  • Grind the cookies into a powder in a mixer, add the melted butter and mix again. Line the bottom of the springform pan with a diameter of 24 cm with paper, fasten the hoop by releasing the paper outside. Put cookies on the bottom and pat. Put in the fridge.
CURD
  • Preheat the oven to  180 degrees C. Put about 1/4 of the amount of cheese, about 1/3 of the amount of sugar and all the potato flour into the mixing bowl. Blend at medium speed on the mixer for approx. 2-3 minutes.
  • Add the rest of the cheese, eggs, vanilla sugar and the rest of the sugar and mix again for 1 minute at high speed until smooth. Pour in the cream and mix until all ingredients combine well.
  • Pour on the bottom, even the surface and put in the oven. Place a small cake pan with boiling water next to the springform pan, filled to about 2/3 of its volume.
  • Close the oven and bake for about 1 hour. Gradually remove from the oven and cool the cheesecake. For best results, cool the cheesecake in the refrigerator after it has cooled down.
  • When the cheesecake is cool, cut it around with a knife and unclip the hoop. Put it on a plate.
TOP
  • It can be prepared after the cheesecake has cooled down on the baking day or the day after baking. Peel the oranges (the orange and white parts under the skin), dice them and put them in a pot.
  • Peel the apple and dice it, add to the pot. Pour in sugar and cinnamon, mix and bring to a boil. Cook for about 4 minutes, stirring every now and then. Set aside from heat, add jelly powder or gelatin and stir until dissolved. Set aside to cool, thicken and stiff.
  • Put the fruit on top of the cheesecake, the sides can be covered with cookies attached to a bit of melted chocolate. Put a few cookies inside
