Tomato 2 cups
Cucumber 1 cup
Avocado 1
Cilantro 1 handful
Lemon juice 3 tbsp
Olive oil 1 tbsp
Red onion
Salt to taste
Add the avocado to a bowl and toss with 1 tablespoon of lime juice. Season with salt. Add the diced cucumbers, tomatoes, and herbs to the bowl with the avocado. Add 2 tablespoons of lime juice and olive oil, then toss thoroughly. Serve immediately. It's best not to save this salad for later, so make as much as you can eat right now.
