Chocolate Chips Bread
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup sunflower oil or melted coconut oil
- 1 cup plain yogurt or buttermilk
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips (plus extra for
topping)
- Optional: 1/2 cup canned pumpkin or mashed banana
for extra moisture and flavor
Directions:
1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch
loaf pan and line with parchment paper.
2. In a medium bowl, whisk together the flour, baking
soda, baking powder, salt, cinnamon, and nutmeg.
3. In a large bowl, beat the eggs with granulated sugar
and brown sugar until light and fluffy.
4. Add the oil, yogurt (or buttermilk), and vanilla extract to
the egg mixture and whisk until smooth. If using, add the
canned pumpkin or mashed banana at this stage.
5. Gradually fold the dry ingredients into the wet mixture,
mixing gently just until combined.
6. Stir in the chocolate chips, ensuring they’re evenly
distributed throughout the batter.
7. Pour the batter into the prepared loaf pan and smooth
the top. Sprinkle a few extra chocolate chips on top for a
beautiful finish.
8. Bake for 50–55 minutes, or until a toothpick inserted
into the center comes out clean or with just a few moist
crumbs.
9. Let the bread cool in the pan for 10 minutes before
transferring to a wire rack to cool completely.
10. Slice and enjoy warm or at room temperature —
perfect with a cup of tea or coffee.
