Salmon Power Bowl with Sautéed Veg & Sauerkraut Crunch 🥑🍄🥬

 



This nutrient-loaded plate is bringing serious glow-up

energy! It’s got flaky baked salmon, buttery avocado,

garlicky mushrooms, tender-crisp asparagus, tangy

sauerkraut, and a leafy bed of greens to hold it all down.

🛒 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:


1 salmon filet (about 4–5 oz)


1/2 avocado, diced


1/2 cup asparagus spears


1/2 cup sliced mushrooms


1/4 cup sauerkraut


1 cup spinach or romaine


1 tsp olive oil


Salt, black pepper, and chili flakes to taste


Optional: squeeze of lemon


👨‍🍳 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:


Cook the Salmon:

Preheat oven to 375°F (190°C). Season salmon with salt

and pepper. Bake 12–15 mins or until just flaky. Let cool

slightly, then break into chunks.


Sauté Mushrooms & Asparagus:

In a skillet, heat olive oil. Add mushrooms and cook until

browned (about 5 mins), then toss in asparagus and

cook another 3–4 mins until just tender. Season to taste.


Build Your Base:

Lay a bed of greens on your plate. Arrange salmon,

avocado, mushrooms, asparagus, and sauerkraut in

sections on top.


Top & Serve:

Sprinkle with chili flakes, cracked black pepper, and a

drizzle of olive oil or lemon juice if desired. Serve warm or

chilled!
