Elegant White Chocolate Cheesecake

 



Ingredients:


For the Crust:

- 1 ½ cups crushed chocolate biscuits or graham crackers

- 1/4 cup unsweetened cocoa powder

- 6 tablespoons melted unsalted butter or plant-based

butter

- 2 tablespoons maple syrup or honey


For the Cheesecake Filling:

- 3 packages (8 oz each) cream cheese, softened

- 1 cup powdered sugar

- 1 teaspoon vanilla extract

- 200g white chocolate, melted and slightly cooled

- 1 1/4 cups whipping cream or coconut cream, whipped

to stiff peaks


For the Chocolate Ganache:

- 1 cup milk chocolate chips or chopped chocolate

- 1/2 cup coconut cream or heavy cream


For Garnish:

- Whipped cream

- Dark chocolate shavings or curls


Directions:


1. In a medium bowl, mix the crushed biscuits, cocoa

powder, melted butter, and maple syrup until well

combined. Press into the base of a springform pan and

refrigerate for 20 minutes to set.


2. In a large bowl, beat cream cheese until smooth. Add

powdered sugar and vanilla extract, and mix until well

incorporated.


3. Slowly mix in the melted white chocolate until creamy

and blended.


4. Fold in the whipped cream gently to maintain a light

and airy texture. Spread the filling over the chilled crust

and smooth the top.


5. Refrigerate for at least 6 hours or overnight until fully

set.


6. For the ganache, heat the cream until steaming and

pour over the chocolate. Let sit for 2 minutes, then stir

until smooth and glossy.


7. Pour the ganache over the chilled cheesecake and

allow it to slightly drip over the edges.


8. Top with a swirl of whipped cream and garnish with

dark chocolate shavings before serving.
