Cobb Salad Remix: Grilled Chicken, Jammy Eggs & Avocado 🥒🍗🥚

 



This isn't your average Cobb salad — it's a nutrient-

dense, flavor-loaded bowl featuring smoky grilled

chicken, silky avocado, jammy eggs, and all the crunch

from fresh cucumber and juicy tomatoes. Blue cheese

crumbles take it to gourmet status. This is next-level fuel.


𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:


2 cups spring mix or romaine lettuce


1 grilled chicken breast, sliced


2 soft-boiled eggs, halved (6-7 minutes cook time)


½ avocado, sliced


½ cup cherry tomatoes, halved


½ cup cucumber, sliced


2 tbsp blue cheese crumbles


Salt & black pepper to taste


Optional Dressing:


1 tbsp olive oil


1 tsp red wine vinegar or lemon juice


½ tsp Dijon mustard


Salt, pepper, and pinch of garlic powder


𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:


Grill the Chicken

Season a chicken breast with salt, pepper, garlic powder,

and olive oil. Grill for 6–7 minutes per side or until cooked

through, then slice thin.


Boil the Eggs

Bring water to a boil, gently add eggs, and boil for 6–7

minutes. Transfer to ice bath, peel, and cut in half.


Assemble the Salad

Layer your greens in a bowl, then top with sliced chicken,

egg halves, avocado, cucumbers, tomatoes, and blue

cheese. Season lightly.


Drizzle & Serve

Mix up your dressing and drizzle on top. Hit it with some

fresh cracked black pepper for that extra bite.
