Sunny Veggie Plate with Fried Eggs & Rainbow Sauté 🥦🍄

 


Start your day with this sunny-side stunner — perfectly

fried eggs with golden yolks, next to a colorful sauté of

broccoli, mushrooms, peppers, and carrots. It’s quick,

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:


2 eggs


½ cup broccoli florets


¼ cup sliced mushrooms


¼ cup diced red bell pepper


¼ cup diced yellow/orange bell pepper


¼ cup carrot slices


1 tsp olive oil or butter


Salt, pepper, chili flakes (optional)


𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:


Sauté the veggies: Heat oil in a skillet. Add carrots first,

then broccoli, mushrooms, and peppers. Sauté 6–8 mins

until vibrant and tender. Season with salt and pepper.


Fry the eggs: In a non-stick pan, fry eggs sunny-side up

over low heat until whites are cooked and yolks are

golden and runny. Sprinkle with salt, pepper, and chili

flakes.


Plate it up: Arrange eggs next to the veggie rainbow.

Keep it simple or serve with toast, avocado, or quinoa on

the side.
