Simple Nourish Plate with Boiled Potatoes, Eggs & Veggies 🍳🥒

 



This no-fuss meal is all about clean, nutrient-rich foods

that fill you up without weighing you down. A warm

stack of boiled potatoes pairs with protein-packed eggs

and fresh raw veggies for the ultimate feel-good combo.


𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:


6–8 baby or small potatoes, peeled


2 hard-boiled eggs, sliced


1/2 avocado, sliced


1/2 tomato or 4–5 grape tomatoes, cut into wedges


1/4 cup cucumber, diced


Salt & black pepper to taste


Optional: pinch of herbs or olive oil drizzle


𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:


Boil the Potatoes

Place peeled potatoes in salted water and boil for 12–15

minutes until fork-tender. Drain and set aside.


Boil the Eggs

Simmer eggs in water for 9–10 minutes. Cool, peel, and

slice or halve.


Prep the Veggies

Slice avocado, dice cucumber, and cut tomato into

wedges.


Assemble the Plate

Arrange boiled potatoes on one half of the plate. Add

eggs, avocado, cucumber, and tomatoes. Sprinkle with

salt, black pepper, and optional herbs for extra flavor.
