Grilled Salmon with Quinoa, Broccoli, and Avocado Salad 🥦🥗
Ingredients:
🐟 Grilled salmon fillets
🌱 1 cup quinoa, cooked
🥦 1 cup steamed broccoli florets
🥑 1 avocado, sliced
🍅 Cherry tomatoes, halved
🥒 Cucumber, sliced
🍋 Lemon wedges
🧂 Salt and pepper to taste
🍶 Olive oil for drizzling
🌿 Fresh herbs (optional)
Instructions:
Grill the Salmon: Preheat your grill to medium-high heat.
Season the salmon fillets with salt, pepper, and a drizzle
of olive oil. Grill for 4-5 minutes on each side or until the
salmon is cooked to your liking. Set aside.
Prepare the Quinoa: Cook the quinoa according to
package instructions. Once done, fluff with a fork and set
aside.
Steam the Broccoli: Steam the broccoli florets until
tender, about 5 minutes. Remove from heat and let them
cool slightly.
Assemble the Salad: In a large bowl, combine the cooked
quinoa, steamed broccoli, cherry tomatoes, and
cucumber slices. Toss gently to mix.
