Slow Cooker Sicilian Chicken Soup Recipe 🍲
Ingredients:
- 1 lb boneless chicken breasts
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup uncooked small pasta (like ditalini or elbows)
- Optional: 1 cup fresh spinach for added greens
Directions:
1. Place the chicken breasts, onion, carrots, celery, and
garlic in the slow cooker.
2. Add the diced tomatoes, chicken broth, oregano, basil,
salt, and pepper. Stir to combine.
3. Cover and cook on low for 6-8 hours or on high for 3-4
hours, until the chicken is tender.
4. About 30 minutes before serving, remove the chicken,
shred it with two forks, and return it to the slow cooker.
Add the pasta and continue cooking until the pasta is al
dente.
5. Stir in the optional spinach and let it wilt for a few
minutes before serving.
