Cheesecake on the bottom of a cookie with fruit sauce

 


Ingredients (24 cm plough):


• 900 g of cheese cheese curd (from a bucket) or

ground curd

• 200 g of sugar

• 4 eggs

• 200 ml of 30% cream

• 1 teaspoon of vanilla extract or sugar

Vanillin

• 2 tablespoons of potato flour

Bottom:

• 250 g of cookies (butter or whole grain)

• 120 g of butter

Sauce and Fruit:

• 300 g of forest fruits (raspberries, blueberries, blackberries)

• 2 tablespoons of sugar

• 1 tablespoon of lemon juice

• 1 teaspoon of potato flour

• 50 ml of water


Preparation:

Crush the cookies into the sand.

Melt the butter and mix with crushed cookies.

Line the bottom of the cake bowl with a cookie mass and press down.

Mix the cottage cheese with sugar.

Add the eggs and mix.

Pour cream and add vanilla.

Add the potato flour and mix to combine.

Pour the cheese mass on the bottom.

Bake 70 minutes at 160°C.

Cool the cheesecake and cool down.

In a pot, heat the fruit with sugar and lemon juice.

Mix the potato flour with water and pour into

fruits.

Cook to thicken and cool.

Pour the cheesecake with sauce and arrange the fruit on top.
