Herring with onion and cucumber

 



Ingredients (4 servings):


• 400 g of herring fillets (salted or in oil)

• 1 large onion

• 4 pickled or pickled cucumbers

• 3 tablespoons of oil (e.g. rapeseed or herring)

• 1 tablespoon of vinegar or lemon juice

• 2 bay leaves

• 4-6 grains of English allspice

• 1/2 teaspoon of black pepper (grain or ground)

• 2 tablespoons chopped dill (optional)


Preparation:


Cut the herrings into pieces.

Cut the onions into feathers.

Cut the cucumbers into cubes or half-slices.

In a bowl, combine herring, onion and cucumbers.

Add bay leaves, allspice and pepper.

Pour the oil and vinegar (or lemon juice) and mix.

Put in the refrigerator for 1-2 hours.

Sprinkle the dill before serving.
