Potato salad with herring
Ingredients (4 servings):
• 500 g of potatoes
• 300 g of herring fillets (matias or herring in oil)
• 4 pickled or pickled cucumbers
• 1/2 of red onions
• 2 tablespoons dill
• 2 tablespoons of oil (e.g. from herring) or olive oil
• 1 tablespoon of lemon juice or vinegar
• 1/2 teaspoon of pepper
• salt to taste
Preparation:
Cook potatoes in their uniforms, cool, peel and cut
into cubes.
Cut the herrings into pieces.
Cut the cucumbers into cubes.
Cut the onions into feathers.
In a bowl, combine potatoes, herrings, cucumbers and onions.
Add dill, oil, and lemon juice (or vinegar) and
mix.
Season with pepper and salt.
Put in the refrigerator for 1 hour.
