Coconut Lime Chia Pudding Bars 🥥🍈❄️

 


🥥 1½ cups shredded coconut  

🌾 ½ cup oat flour  

🍯 2 tbsp maple syrup  

🥥 2 tbsp coconut oil, melted  


🥣 Chia Layer:  

🥛 1 cup coconut milk  

🥄 3 tbsp chia seeds  

🍯 2 tbsp maple syrup  

🍈 Zest + juice of 1 lime  


Mix crust ingredients, press into a lined loaf pan, and

chill. For the chia layer, whisk coconut milk, chia seeds,

maple syrup, lime zest, and juice. Let sit 10 min to

thicken, then pour over crust. Chill 4+ hours or overnight.

Slice and serve chilled.

Chill time: 4 hrs  

Total time: ~4 hr 15 min  

Approx. 160 kcal per bar | Makes 8 bars
