Broccoli, Spinach, and Halloumi Stuffed Zucchini Boats

 



Ingredients:


Zucchini Boats:

4 medium zucchinis, halved lengthwise and scooped

(600 g)

1 tablespoon olive oil

(15 ml)

1/2 teaspoon salt

(3 g)

1/4 teaspoon black pepper

(1 g)


Filling:

1 cup chopped broccoli, steamed

(90 g)

2 cups fresh spinach, chopped

(60 g)

6 oz halloumi cheese, diced

(170 g)

1 clove garlic, minced

(3 g)


Optional Garnish:

Fresh parsley or lemon zest


Directions:


Preheat oven to 375°F / 190°C and grease a baking dish.


Toss zucchini halves with olive oil, salt, and pepper.

Arrange in dish.


Mix broccoli, spinach, halloumi, and garlic. Spoon filling

into zucchini boats.


Bake 25–30 minutes until zucchini is tender and halloumi

is golden. Garnish and serve warm.
