Greek Feta & Cucumber Bite Skewers

 



Ingredients:


Skewers:

1 large cucumber, sliced into 1/2-inch rounds

(250 g)

6 oz feta cheese, cut into small cubes

(170 g)

1/4 cup cherry tomatoes, halved

(40 g)

12 small wooden skewers or toothpicks

Fresh oregano or mint leaves for garnish (optional)


Dressing (optional):

1 tablespoon olive oil

(15 ml)

1 teaspoon lemon juice

(5 ml)

Pinch salt and pepper


Directions:


Assemble cucumber slices, feta cubes, and cherry

tomato halves onto skewers.


Whisk olive oil, lemon juice, salt, and pepper if using.

Drizzle over skewers.


Garnish with fresh herbs and serve immediately.
