Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, divided (use 1/4 cup for batter
and 1/4 cup for swirl)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon (for the swirl)
- 1/4 cup melted butter (for brushing tops, optional)
Directions:
1. Preheat your oven to 375°F (190°C). Line a 12-cup
muffin tin with paper liners.
2. In a large bowl, whisk together the flour, granulated
sugar, 1/4 cup brown sugar, baking powder, baking soda,
and salt.
3. In a separate bowl, mix the milk, vegetable oil, egg, and
vanilla extract until well combined.
4. Pour the wet ingredients into the dry ingredients and
stir gently until just combined (do not overmix; it's okay if
there are a few lumps).
5. In a small bowl, mix the remaining 1/4 cup brown
sugar with the ground cinnamon to create the swirl
mixture.
6. Spoon the batter into the muffin liners, filling each
about two-thirds full. Sprinkle a teaspoon of the
cinnamon-sugar mixture on top of each and use a
toothpick or knife to swirl it into the batter.
7. Bake for 18-20 minutes, or until a toothpick inserted
into the center comes out clean. Let the muffins cool in
the tin for 5 minutes, then transfer to a wire rack.
