Cottage Cheese and Veggie Bake

 


Ingredients:


Vegetables:

2 cups broccoli florets

(200 g)

1 cup bell peppers, diced

(150 g)

1 cup zucchini, diced

(150 g)

1 small onion, diced

(100 g)

2 tablespoons olive oil

(30 ml)

1 teaspoon salt

(6 g)

1/2 teaspoon black pepper

(2 g)


Cottage Cheese Mixture:

1 ½ cups cottage cheese

(360 g)

2 eggs

(100 g)

1/2 teaspoon garlic powder

(1 g)

1/2 teaspoon dried herbs (thyme, oregano, or parsley)

(1 g)


Optional Topping:

1/2 cup shredded cheese (cheddar, mozzarella, or

Gruyère)

(50 g)


Directions:


Preheat oven to 375°F / 190°C. Toss vegetables with

olive oil, salt, and pepper. Spread in a baking dish.


Whisk cottage cheese, eggs, garlic powder, and herbs.

Pour over vegetables.


Top with shredded cheese if using.


Bake 25–30 minutes until set and lightly golden. Serve

warm.
