Pitaya and Black Goji Berry Cheesecake Recipe 🍰💖
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup pitaya (dragon fruit) puree
- 1/2 cup dried black goji berries, soaked and drained
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- Zest of 1 lime (optional for extra flavor)
Directions:
1. Prepare the crust by mixing graham cracker crumbs
and melted butter in a bowl until combined. Press the
mixture firmly into the bottom of a 9-inch springform
pan. Chill in the refrigerator for 15 minutes.
2. Preheat your oven to 325°F (165°C). In a large mixing
bowl, beat the cream cheese and sugar until smooth. Add
eggs one at a time, mixing well after each addition.
3. Stir in the pitaya puree, black goji berries, vanilla
extract, heavy cream, and lime zest if using. Pour the
filling over the prepared crust in the pan.
4. Bake for 45-50 minutes, or until the center is set but
still slightly jiggly. Turn off the oven and let the
cheesecake cool inside with the door ajar for 1 hour.
5. Refrigerate the cheesecake for at least 3 hours or
overnight before serving. Slice and enjoy.
