Ingredients:
1 cup ube halaya (purple yam jam)
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Powdered sugar for coating
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, blend the softened butter, granulated
sugar, and brown sugar until the mixture is light and
fluffy.
3. Add the ube halaya, eggs, and vanilla extract, and mix
everything together until it is well combined.
4. In a separate bowl, combine the flour, baking powder,
and salt by whisking them together.
5. Gradually mix the dry ingredients into the wet
ingredients until just combined.
6. Chill the dough in the refrigerator for about 30
minutes.
7. Take tablespoon-sized pieces of dough, roll them into
balls, and coat each ball with powdered sugar.
8. Arrange the coated cookie balls on a baking sheet that
has been lined with parchment paper.
9. Bake for 10-12 minutes, or until you notice that the
edges are firm.
10. Allow the cookies to cool down before enjoying them.
