Elegant White Chocolate Blackberry Mousse Cheesecake 🎂
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 8 ounces white chocolate, melted
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh blackberries (divided)
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon unflavored gelatin
- 2 tablespoons water
Directions:
1. Preheat your oven to 325°F (165°C). Grease a 9-inch
springform pan.
2. In a bowl, mix graham cracker crumbs, melted butter,
and 1/4 cup granulated sugar until combined. Press the
mixture firmly into the bottom of the pan to form the
crust. Bake for 10 minutes, then set aside to cool.
3. In a large bowl, beat cream cheese and 1/4 cup
granulated sugar until smooth. Add melted white
chocolate, eggs, and vanilla extract, mixing until fully
incorporated. Pour the mixture over the cooled crust and
bake for 40-45 minutes, or until the center is set. Let it
cool completely.
4. For the mousse, puree 1 1/2 cups blackberries in a
blender and strain to remove seeds. In a small bowl,
dissolve gelatin in water and let it sit for 5 minutes. Whip
heavy cream and powdered sugar until soft peaks form,
then fold in the blackberry puree and gelatin mixture.
5. Spread the mousse evenly over the cooled cheesecake
layer. Refrigerate for at least 4 hours or until firm.
6. Before serving, top with the remaining fresh
blackberries and optional white chocolate shavings.
