🛒 Ingredients
Grilled Chicken:
🍗 2 large chicken breasts
🫒 1 tbsp olive oil

Sweet Potato Fries:
🍠 2 large sweet potatoes, cut into wedges
🫒 1½ tbsp olive oil
🌶️ ½ tsp paprika
🧂 ½ tsp salt
Avocado Mash:
🥑 2 ripe avocados
🍋 1 tbsp lemon juice
🧂 Pinch of salt
🌿 1 tbsp chopped parsley
Tomato Salsa:
🍅 1 cup cherry tomatoes, halved
🧅 ¼ red onion, finely diced
🥑 ½ avocado, diced
🌿 1 tbsp chopped parsley
🍋 1 tsp lemon juice
👩🍳 Instructions
Bake sweet potatoes: Preheat oven to 220°C (425°F).
Toss wedges with olive oil, paprika, and salt. Roast
25–30 minutes, flipping halfway, until crispy and
caramelized.
Season chicken: Rub with olive oil, salt, pepper, oregano,
and parsley.
Grill chicken: Cook in a hot grill pan 5–7 minutes per side
until internal temperature reaches 75°C (165°F). Rest 5
minutes and slice.
Prepare avocado mash: Mash avocados with lemon
juice, salt, and parsley until smooth.
Make salsa: Combine tomatoes, onion, avocado cubes,
parsley, and lemon juice.
Assemble bowl: Arrange sliced chicken, sweet potato
wedges, salsa, and a generous scoop of avocado mash
in a bowl.
