Ingredients:
2 cups cooked orzo pasta
2 cups cooked, diced chicken breast
2 cups baby spinach or mixed greens
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, pitted and sliced
For the Lemon Feta Yogurt Sauce:
1/2 cup Greek yogurt
1/4 cup crumbled feta cheese
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1 teaspoon honey
Salt and black pepper to taste
Directions:
In a large bowl, combine cooked orzo, diced chicken,
spinach, cherry tomatoes, red onion, and olives.
In a separate bowl, whisk together Greek yogurt, feta
cheese, lemon juice, lemon zest, Dijon mustard, honey,
salt, and black pepper until smooth.
Pour the lemon feta yogurt sauce over the salad and toss
gently to coat all ingredients.
Taste and adjust seasoning as needed. Serve chilled or
at room temperature.
