Ingredients:
- 1 cup (150g) fresh strawberries, halved
- 1 tablespoon honey
- 1 teaspoon balsamic glaze (optional)
- 1 cup (250g) ricotta cheese
- 1 tablespoon powdered sugar (optional)
- 4 slices thick-cut bread (like sourdough or brioche)
- 1 tablespoon olive oil or butter (15ml)
- Fresh mint or basil, for garnish
Instructions:
1. Preheat the oven to 375°F (190°C). Place the halved
strawberries on a baking sheet lined with parchment
paper.
2. Drizzle the strawberries with honey and roast for 15-20
minutes, until they are soft and caramelized. Set aside to
cool.
3. In a medium bowl, whip the ricotta cheese with
powdered sugar (if using) until smooth and creamy.
4. In a skillet, toast the bread slices with olive oil or butter
over medium heat until they are golden brown and crisp
on both sides.
5. Spread a generous layer of whipped ricotta on each
warm slice of toast.
6. Top each toast with the roasted strawberries.
7. Drizzle with balsamic glaze if desired and garnish with
fresh mint or basil leaves.
