Creamy, fluffy strawberry mousse over rich ganache with
a crunchy cookie crust.
Ingredients
1 1/2 cups chocolate cookie crumbs (Oreos with filling
scraped off, or chocolate graham crumbs)
6 tbsp unsalted butter, melted
2 tbsp granulated sugar
Pinch of kosher salt
Chocolate ganache layer:
1 cup semi-sweet chocolate chips
3/4 cup heavy cream
1 tbsp unsalted butter (for extra shine)
Pinch of salt
Strawberry mousse layer:
1 tsp unflavored gelatin
2 tbsp cold water
1 1/2 cups strawberry puree (about 12 oz strawberries,
blended and strained)
1/3 cup granulated sugar
1 tbsp lemon juice
Pinch of salt
1 cup heavy cream, cold
4 oz cream cheese, softened (optional, for a cheesecake-
like body)
1 tsp vanilla extract
Chocolate drip & topping:
1/2 cup semi-sweet chocolate chips
1/4 cup heavy cream
Fresh strawberries
Whipped cream (optional)
Directions
Stir cookie crumbs, melted butter, sugar, and salt until
evenly moistened.
Press crumbs firmly into a 9-inch tart pan (or springform
pan) to form an even crust. Chill time: refrigerate 20
minutes.
Make ganache: heat 3/4 cup cream until steaming (not
boiling), pour over 1 cup chocolate chips, rest 2 minutes,
then whisk smooth with butter and a pinch of salt.
Pour ganache into the crust and tilt to level. Chill time:
refrigerate 45–60 minutes until set.
Bloom gelatin: sprinkle gelatin over cold water and let
stand 5 minutes, then microwave 8–10 seconds to melt.
In a bowl, whisk strawberry puree, sugar, lemon juice,
salt, and vanilla (and cream cheese if using) until
smooth, then whisk in melted gelatin.
Whip 1 cup cold heavy cream to soft peaks, then fold
into the strawberry mixture until light and fluffy.
Spread strawberry mousse over the set ganache and
smooth the top. Chill time: refrigerate at least 4 hours
(overnight is best).
For the chocolate drip, heat 1/4 cup cream and pour over
1/2 cup chocolate chips; whisk smooth. Cool 5 minutes,
then spoon along the edge so it drips down.
Garnish with strawberries and a few whipped cream
swirls before serving.
