Frittata with pasta, tomatoes, and cheese



Ingredients
Pasta 100 g
Tomato 1
Onion 1
Olives 12
Egg 8
Feta cheese 60 g
Butter 2 tbsp
Fresh basil 2 tbsp
Vegetable oil 1 tbsp
Mint 1/4 tsp
Ground black pepper to taste
Salt to taste

Boil the pasta. Scald the tomato, peel it, cut it in half, remove the seeds, and chop finely.

Finely chop the onion, fry in vegetable oil, add the tomato, basil, and mint, and fry for 2 minutes.

Add the pasta and chopped olives, stir, and cook for another 1 minute.

 Beat the eggs with salt and pepper and combine with the pasta and vegetable mixture. Melt the butter, pour the mixture into it, sprinkle with crumbled feta cheese, and cook over low heat until thickened.

Serve, cut into portions, with tomato sauce or hot ketchup.
