Ingredients
Puff pastry 250g
Feta cheese 150g
Parmesan cheese 40g
Pine nuts 3 tbsp
Fresh basil 1 handful
Garlic 1 clove
Olive oil 4 tbsp
Cherry tomatoes 13
Roll the dough lightly in one direction. Using a small cutter (about 2.5 cm in diameter), cut out circles from the dough and place on a parchment-lined baking sheet. Brush with beaten egg and bake in a preheated oven at 200°C (400°F). Bake for 15-20 minutes until golden brown. Remove and cool.

Reserve some basil leaves for garnish, and place the rest in a blender. Add grated Parmesan, pine nuts, chopped garlic, basil, and olive oil. Add feta and blend until a thick paste forms.

Cut the tomatoes into quarters or halves. Assemble the canapés before serving. Spoon 1 teaspoon of cheese spread onto each puff pastry base, then garnish with a tomato and basil leaf.

Serve with black or Kalamata olives.
