Ingredients
Beef 450 g
Vegetable oil 40 ml
Red beans in their own juice 200 g
Tomato puree 500 g
Coriander 1 tsp
Parmesan cheese 200 g
Tortillas 6 pcs
Onion 1 pc
Red chili pepper 2 pcs
Canned corn 150 g
Cumin 1 tsp
Butter 30 g
Thin, crispy tortillas, a spicy meat filling, and gooey cheese make this dish quite appetizing.
Make ground beef. When you only need a small amount, a blender is very convenient. Chop the onion. Sauté the ground beef together until the meat loses its red color.
Finely chop a couple of chili peppers and season the ground beef with them. Add cooked beans (or canned beans in their own juices, for a quicker cooking time) and corn to the pan with the ground beef, stir, and fry for 2-3 minutes.
Add the tomato puree, spices, stir, and season with salt. Cook for another 5 minutes to allow the liquid to evaporate slightly. Place a tortilla in a lightly oiled pan and sprinkle with shredded cheese.
Spread the meat filling evenly over the top. Sprinkle with more cheese and top with a second tortilla. Flip the fried quesadilla and fry the other side. This filling makes 3 quesadillas, so if you don't have that many, you can reduce the filling proportions.
