⇒ 2 tbsp flour (to toss with fruit)

Prep: Preheat your oven to 350°F (175°C). In a small
bowl, toss the dried fruit with 2 tbsp of flour to prevent
them from sinking to the bottom of the cake.

Dry Mix: In a medium bowl, whisk together the 1 ¾ cups
flour, baking powder, baking soda, and salt.
⠀
Cream: In a large bowl, beat the butter and brown sugar
until light and fluffy. Add the eggs one at a time,
followed by the vanilla and coconut extracts.

Combine: Mix in the yogurt, then gradually add the dry
ingredients until just combined. Gently fold in the
desiccated coconut and the floured dried fruit.

Bake: Pour the batter into a greased loaf or cake pan and
sprinkle chopped nuts on top. Bake for 45–55 minutes, or
until a toothpick comes out clean. Cool completely
before slicing.
