Ingredients
2 beets
2 apples
1 can white beans
1 bunch parsley
Lemon juice
A pinch of sugar
Salt
Pepper
Vegetable oil
Boil the beets, peel, and chop (we cut the vegetables for the salad raw and steam them). Core the apples, slice them, and immediately drizzle with lemon juice. Drain the beans. Mix the apples, beets, and beans, add chopped parsley and sugar, season with salt and pepper, and season with oil. Delicious with warm, crispy bread or toast.
