Ingredients
2 oranges
300 g cabbage
1 bunch basil
1 bunch parsley
Green onion
3 tbsp apple cider vinegar
2 tbsp olive oil
Salt to taste
Pepper to taste
Thinly shred the cabbage and lightly mash with a pinch of salt. Juice one orange (we'll need 2 tbsp), peel the second, cut into slices, and cut each slice into quarters.
Chop the greens roughly. Prepare the dressing. Mix the vinegar, orange juice, and oil. Whisk with a fork. Combine the greens, cabbage, oranges, and dressing in a salad bowl. Season with salt and pepper to taste. Serve.
