Ingredients
1/4 red onion
1 clove garlic
2 tbsp wine vinegar
Salt
Pepper
1/2 cup olive oil
1 tsp coriander
1 pinch ground red pepper
1000 g tomato
1/2 cup olives
200 g cilantro
Chop the onion and garlic and mix with the vinegar. Add the olive oil and stir. Toast the coriander seeds for a couple of minutes. Crush them in a mortar, then mix with the red pepper.
Thinly slice the tomatoes and place in a salad bowl. Add the olives, garlic, onion, and dressing. Mix thoroughly. Sprinkle with cilantro. Season with salt and pepper to taste.
