Bell Pepper and Pork Pork Salad



Ingredients
Bell peppers 2
Potatoes 3
Olive oil 8 tbsp
Lettuce
Pork Pork 300 g
Curry 1 tsp
Lemon juice 2 tbsp
Mozzarella cheese 200 g
Salt to taste

Boil the potatoes, cut into small slices, and place on a baking sheet lined with parchment paper. Then season with salt, pepper, and brush with 1 tbsp of oil.

Cut the peppers in half, remove the seeds, and place them on the baking sheet, skin side up. Bake the baking sheet with the vegetables in a preheated oven at 200°C for 10 minutes.

Meanwhile, cut the pork into small slices. Mix the curry with 3 tablespoons of oil to create a sauce for the potatoes.

After 10 minutes, remove the peppers from the baking sheet, place them on a plate, and cover with a damp towel. Set aside to cool. Place the roasted pork on the baking sheet with the potatoes, and brush the potatoes with the resulting sauce. Return the baking sheet to the oven at the same temperature for another 3-4 minutes.

Chop the lettuce leaves. Shred the mozzarella cheese, if needed. Carefully peel the peppers and cut into thin slices.

Let the potatoes and roasted pork cool slightly and begin assembling the bell pepper salad. Place all ingredients in a bowl. Dress the salad with a mixture of lemon juice and the remaining olive oil. Season with salt to taste and toss gently.
