Ingredients:
10 quail eggs
2 handfuls of lamb's lettuce
1 handful of radish sprouts
1 small red onion
1 tablespoon of rocket pesto
1 tablespoon lemon juice
salt
pepper
(recipe for 2-3 portions)
Put the quail eggs in boiling water and cook for 3 minutes, peel and cut in half. Wash the lamb's lettuce in a bowl, add the onion and sprouts cut into feathers. Combine pesto with lemon juice, mix with greens. All season with salt and freshly ground pepper.
