Ingredients
For the Apple Fritter Batter:
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp sea salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
2 large eggs
1/2 cup whole milk
2 tbsp unsalted butter, melted
1 tsp vanilla bean paste
For the Apple Filling:
2 Granny Smith apples, peeled and finely diced
1 tbsp lemon juice
2 tbsp brown sugar
1/2 tsp ground cinnamon
For the Vanilla Bean Glaze:
1 cup powdered sugar
2 tbsp heavy cream
1/2 tsp vanilla bean paste
1 pinch sea salt
For Garnish:
1/4 cup toasted pecans, finely chopped
1 tsp cinnamon sugar
Directions
Preheat your waffle iron to a medium-high setting and
lightly grease with non-stick spray or melted butter.
In a small bowl, toss the diced apples with lemon juice,
brown sugar, and cinnamon; set aside to macerate for 5
minutes.
In a large mixing bowl, whisk together the flour,
granulated sugar, baking powder, salt, cinnamon, and
nutmeg.
In a separate bowl, whisk the eggs, milk, melted butter,
and vanilla bean paste until well combined.
Pour the wet ingredients into the dry ingredients and stir
until just combined; fold in the macerated apples along
with any accumulated juices.
Scoop about 1/3 to 1/2 cup of batter (depending on your
waffle iron size) into the center of the iron. Close and
cook for 3 to 5 minutes until the waffle is deep golden
brown and crisp.
While the waffles cook, whisk together the powdered
sugar, heavy cream, vanilla bean paste, and salt until a
thick, pourable glaze forms.
Remove the waffles and place them on a wire rack. While
still warm, generously drizzle or dip the "donut" waffles
into the vanilla bean glaze.
Immediately sprinkle with chopped pecans and a dusting
of cinnamon sugar.
Serve warm for the best fritter-like texture.
