Ingredients:
- 1 lb (450g) chicken breast, cubed
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 8 oz (225g) rotini pasta
- 1/2 cup (120ml) cream
- 1/2 cup (60g) shredded mozzarella
- 1/4 cup (25g) grated Parmesan
- Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil. Add the
rotini pasta and cook according to package instructions
until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat.
Add the cubed chicken breast and sauté until golden
brown and cooked through, about 5-7 minutes.
3. Add the minced garlic to the skillet and cook for an
additional 1 minute, stirring frequently to prevent
burning.
4. Pour in the cream and add the shredded mozzarella
and grated Parmesan. Stir continuously until the cheeses
are melted and the sauce is creamy.
5. Toss the cooked rotini pasta into the skillet with the
creamy chicken mixture. Season with salt and pepper to
taste and mix well to combine.
6. Serve warm, garnished with extra cheese or herbs if
desired.
