Tiger Prawns with Tomatoes



Ingredients
Tiger Prawns 200 g
Dry White Wine 50 ml
Olive Oil 20 ml
Butter 20 g
Tomato 200 g
Garlic 10 g
Basil 5 g
Parsley 5 g
Thyme 5 g
Lemon 30 g
Ground White Pepper 1 g
Sea Salt 2 g

Season the tiger prawns with salt and ground white pepper and fry in a pan with olive oil and chopped garlic. Add white wine and reduce the liquid.

Next, add the Concassé tomatoes by immersing them first in hot water, then in cold water. Peel, cut in half, remove the core, and dice.

 Add fresh basil, parsley, and thyme. Drizzle the sauce with butter.
Garnish the finished dish with a lemon wedge and chopped parsley.
