Coconut curry with sweet potatoes and chickpeas - ingredients:
1 small onion,
2 large sweet potatoes,
1 large carrot,
1 teaspoon curry powder,
1 can of coconut milk,
0.5 cup vegetable broth,
1.5 cups cooked chickpeas,
1 cup frozen peas,
2 tablespoons of oil,
salt pepper
Coconut curry with sweet potatoes and chickpeas - recipe
In hot oil, fry the onion into feathers. Add sliced carrots. After 5 minutes, add the diced sweet potatoes and curry. After another 5 minutes, pour in the coconut milk, broth, season with salt and pepper and cook for 20 minutes. In the middle of this time, add peas. Serve with rice or quinoa.
