Bourbon Chocolate Cake with Blackberry Buttercream 🍫
Ingredients:
- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 1/2 cup bourbon
- 2 teaspoons vanilla extract
- 1 cup boiling water
- For the buttercream: 1 cup unsalted butter (softened)
- 4 cups powdered sugar
- 1/2 cup blackberry puree (from fresh or frozen
blackberries)
- 1 teaspoon vanilla extract
- 1-2 tablespoons heavy cream (as needed for
consistency)
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour
two 9-inch round cake pans.
2. In a large bowl, whisk together the flour, sugar, cocoa
powder, baking powder, baking soda, and salt.
3. Add the eggs, milk, oil, bourbon, and vanilla extract to
the dry ingredients. Mix on medium speed until well
combined.
4. Stir in the boiling water to the batter; it will be thin.
Pour the batter evenly into the prepared pans.
5. Bake for 30-35 minutes, or until a toothpick inserted in
the center comes out clean. Let the cakes cool in the
pans for 10 minutes, then transfer to a wire rack to cool
completely.
6. While the cakes cool, make the buttercream: In a bowl,
beat the softened butter until creamy. Gradually add
powdered sugar, blackberry puree, and vanilla extract,
beating until smooth. Add heavy cream as needed to
reach desired spreading consistency.
7. Once the cakes are cool, level the tops if necessary,
then frost the layers with the blackberry buttercream and
stack them. Frost the outside of the cake.
