Spicy Pineapple and Jerk Chicken Skewers
Ingredients:
1 lb (450 g) boneless, skinless chicken breasts, cut into 1-
inch cubes
1 cup fresh pineapple chunks
2 tablespoons olive oil
2 tablespoons soy sauce
1–2 tablespoons Jamaican jerk seasoning (adjust to
taste)
1 tablespoon lime juice
1 clove garlic, minced
1 teaspoon honey or brown sugar (optional, for
sweetness)
Salt and black pepper, to taste
Wooden or metal skewers (if using wooden, soak in
water for 30 minutes)
Instructions:
Prepare the marinade: In a bowl, combine olive oil, soy
sauce, jerk seasoning, lime juice, garlic, honey (if using),
salt, and black pepper.
Marinate the chicken: Add the chicken cubes to the
marinade and toss to coat evenly. Cover and refrigerate
for at least 30 minutes, up to 2 hours for stronger flavor.
Preheat the grill: Heat your grill to medium-high. If using
an oven, preheat to 400°F (200°C).
Assemble the skewers: Alternate threading chicken and
pineapple chunks onto the skewers.
Cook the skewers:
Grill: Grill for 10–12 minutes, turning occasionally, until
chicken is cooked through and slightly charred.
Oven: Place skewers on a lined baking sheet and bake
for 15–18 minutes, broiling the last 2–3 minutes for a
charred finish.
Serve: Remove from skewers and serve hot. Perfect with
rice, salad, or in wraps.
