Ingredients 🛒
2 boneless chicken breasts, cut into chunks
1/3 cup teriyaki sauce (store-bought or homemade)
1 cup jasmine or sushi rice
1/2 avocado, diced
1 small cucumber, thinly sliced
1 cup broccoli florets, steamed
1 spring onion, sliced (for garnish)
Instructions 👩🍳
Cook the rice according to package directions. Set aside
and keep warm.
Steam the broccoli for 3–4 minutes until vibrant and
tender.
Sear the chicken in a hot pan with a little oil until golden
and fully cooked, about 6–7 minutes.
Add teriyaki sauce to the pan and simmer 2 minutes until
glossy and thickened.
Assemble your bowl: rice in the center, topped with
chicken, broccoli, cucumber slices, and avocado chunks.
Garnish with chopped spring onion. Serve warm or room
temperature.
